Nicey Spicy Pickling Spice


25 lbs of pickling cukes filled one crock


We usually buy pre-mixed pickling spice from Penzey's Spices, but for some reason forgot to. So we made our own!

Oh, how I love coriander! So fresh and lemony. I also love my mom's porcelain measuring spoons.

After looking at several recipes online, we settled on our own combination.


I like this website,, because you can alter the finished yield amount you want, and it updates the ingredient quantities for you. No math! Although I kind of like math, to be honest. I didn’t use this particular recipe, but I’m happy to know about this website, now.

Here’s what we did, to make enough for 2 big 5 gallon crocks:

1/2 cup + 1 Tablespoon whole mustard seed

5 Tablespoons whole allspice

3 Tablespoons coriander seed

2 teaspoons whole cloves

5 teaspoons ground ginger

5 teaspoons red pepper flakes

5 bay leaves, crumbled

5 cinnamon sticks, roughly crushed
